Mineral composition and alkalinity can influence extraction and flavour. The best target depends on the recipe and brewing equipment.
Scale is a separate question
Heating water can cause scale under suitable conditions. Review the equipment manufacturer’s inlet-water limits and the actual source-water results.
Choose a treatment route deliberately
Softening, filtration, reverse osmosis and blending serve different purposes. Do not assume that a lower conductivity reading alone proves the water is right for your application.
